a small miracle

let it be known that today, on macy's 1,016th day of life, she ate something besides oatmeal, yogurt, macaroni & cheese, or cheerios for dinner.

i asked her (like i always do with whatever we're eating), "do you want some of the chicken soup i made?"
usually that's followed by a "no".  but instead she nodded her head and pointed to the pot like she wanted some.  she's done that before, but as soon as she sees that it isn't one of the aforementioned foods, she pushes it away.  

but not today!  she ate it!  well, she ate the broth and some of the chicken, but we'll take anything! she liked it and was excited about it.  who knew it would be my chicken/vegetable soup that would bring her out of her anorexic-like behavior?


so in honor of macy's big day, i'm sharing this most-delicious recipe with you.  we love it and it's perfect for these cold, winter days.

chicken soup au gratin
(or, "macy's soup" as we started calling it today)

4 chicken breasts
4 cups water
1 tsp. salt
1 cup chopped onion
1 cup chopped carrots
1 cup diced celery
2 (10 oz.) cans cream of chicken soup
1 cup half n' half or milk
dash of pepper
2 cups grated cheddar cheese

cook chicken in the water and dice.  boil vegetables in the broth (the same water you cooked the chicken in) until tender.  add the salt and pepper and gradually stir in the soup and milk. add cheese and chicken.  heat through, stirring until cheese melts.

Tell Macy that Grammy and Papa Dave are proud of her and that we will be trying "her" soup soon. It sounds good.

Thanks for you comment! I'm always a little scared when people say they knew D at BYU-I because my sister knew him there as well and has lots of funny stories about him that I hold over his head on occasion! :)

Thanks for reading the ole' blog. I need to be writing more about Scotland in general, because it really is a gorgeous, wonderful place. It weird how now it's just become "where we live" instead of the magical kingdom it was when we first arrived.

I love that your brother named their little girl Aberdeen. That is adorable. I'm going to file that away for the future!

This soup sounds to die for, and I've bookmarked it so that I can make it next week!
